Dr. Cole highlighted the work of David Thomas, which showed the decrease in essential nutrients and minerals in fruits, vegetables, and meats since the post-World War II era. She pointed out that the addition of synthetic chemicals to produce bigger and better crops does not necessarily lead to more nutritious food, instead it dilutes the nutritional value.
